This is a great zucchini recipe for those who like a little more “umph” to their zucchini side dishes. It is really easy to prepare and will make 6 servings.
Ingredients:
2 lbs. fresh zucchini
1 green pepper, chopped
1 onion, chopped
1 clove garlic, minced
1 teaspoon salt
1 teaspoon ground black pepper
4 tomatoes, peeled and chopped
2 tablespoons butter, softened
2 tablespoons parsley
Directions:
Wash the zucchini and pepper and chop them into pieces. In your slow cooker pot, combine the zucchini, green pepper, onion, minced garlic, salt and ground black pepper. Top the vegetable mixture with the tomatoes, butter and parsley. Cover and cook on low for 4-5 hours or until done.
